The standard, according to AGROCERT, enables companies to develop a quality assurance system for pork production, at each stage of the production process. Each stage can be certified separately, and its objective is to control various microbiological and chemical risks throughout the process of pork production. The standard consists of five individual specifications whose requirements are the following:
AGRO 3.1: Specification for pig feed production
AGRO 3.2: Specification for pig breeding
AGRO 3.3: Specification for the pigs’ slaughter
AGRO 3.4: Specification for slicing, deboning, processing, and standardizing of pork meat
AGRO 3.5: Specification for the pork retail markets
